Pork Peep Chops

6 pork chops, about 1/2 inch thick<BR>
3 Tablespoons red wine vinegar, divided<BR>
2 tomatoes, chopped, about 1 1/2 cups<BR>
1/4 cup frozen chopped onion and green pepper mix<BR>
1 package stuffing mix for pork<BR>
1/4 cup margarine, melted<BR>
1 cup hot water<BR>
6 Peeps<BR><BR>
 
Cover shallow baking pan with foil for easy cleanup.  Spray foil with non-stick spray.<BR><BR>  Using 2 tablespoons of vinegar, brush both sides of chops.  Sprinkle both sides with salt and pepper. <BR><BR> Using kitchen shears, snip the top 1/3 of the Peeps off, reserving the heads.  Snip the bodies into dice size pieces. <BR><BR> In a large bowl, mix the chopped Peep pieces, 1 tablespoon vinegar and all of the remaining ingredients.  <BR><BR>Stir until mixed, then form into 6 burger shaped patties about 1/2 inch thick.  <BR><BR>Place stuffing patties on top of pork chops.  Make a tent of foil, cover loosely and bake 1 hour.  Uncover and bake 30 minutes more.  <BR><BR>Remove from oven.  Brush the Peep heads with hot pepper sauce and place one on top of each stuffed chop. <BR><BR> Arrange on serving platter and be ready for smiles!<BR><BR>
 
Note:  The tanginess of the tomatoes, vinegar and hot pepper sauce is a perfect compliment to the sweetness of the Peeps.
