Taste of the Ozarks: Greek Salad with Sweet Basil Vinaigrette

Here is a great spring time recipe for those of us who are ready to bid goodbye to winter.

Greek salad with sweet basil vinaigrette

4 cups chopped romaine or fresh baby spinach
1/4 cup black olives
1/4 cup Kalamata olives
1/2 cup crumbled feta cheese
1/2 cup chopped cucumbers
1/2 cup sliced red onions
1/2 cup chopped Roma tomatoes
Optional 2 cups grilled chicken

In a large bowl put down greens top with olives tomatoes cucumbers onions and cheese. Garnish the top with optional grilled meat. Top with dressing immediately before serving.

Dressing
2/3 cup olive oil
1/3 cup white vinegar
4 tablespoons white sugar
1 teaspoon garlic salt
1 tablespoon dried sweet basil

Combine all dressing gradients in a medium-size bowl and whisk together vigorously. Recipe serves four.
