Cassie planned ahead and used leftovers from a weekend meal to create some of these weekday lunch ideas. So, if she's making chicken. She'll cook extra meat and plan to use the leftover in lunches.
First idea: Asian Lettuce Wraps. Use the leftover chicken, wrap in lettuce with Sesame Oil. You can add sugar snap peas.
Second idea: Chicken Salad. Use leftover chicken, will full fat Greek Yogurt. Cassie added parsley to the Chicken Salad. Instead of crackers, she used sliced cucumbers.
Third idea: Add chicken to a salad in a to go bowl. Cassie added sliced grapes to the salad. For crunch, she added salted and roasted pumpkin seeds. Use dressing of your choice.
Fourth idea: Turkey Taco Meat Use a sliced red bell pepper instead of taco shells.
Fifth idea: Protein Box. Boiled eggs, veggies and Almond Butter.
