Mini St. Patrick’s Day Potatoes

24 mini assorted potatoes
1/3 cup chopped onions
2 ounces Borson cheese
1/4 cup chopped cooked bacon bits
1/4 cup shredded cheese

Bake the potatoes until tender. Cut each potato in half and scoop out the insides. Put the potato insides the cheeses and the bacon bits into a bowl and mash until completely combined. Take some of the filling mixture and put it into each potato shell. Bake in a 350° oven for five minutes. Remove from oven and garnish with green onions. Recipe serves 12.
