RECIPE: Baked Pumpkin Oatmeal Bars

SPRINGFIELD, Mo. Pumpkin Chocolate Chip Oatmeal Bars

Yield: 6 servings
Serving size: 1 piece (~2.5" x 4")

Ingredients:
2 cups rolled quick oats
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon pumpkin pie spice
1 teaspoon sugar
1 1/3 cup pureed pumpkin (320g)
2/3 cup skim milk
2 tbsp canola oil
1 tsp pure vanilla extract
1/2 cup dark chocolate chips

Directions:
1. Spray an 8"x8" pan with cooking spray.
2. Preheat oven to 380° F.
3. Place all dry ingredients in mixing bowl and stir together.
4. Add remaining ingredients and mix together.
5. Spread in pan and press down with a spoon.
6. Bake for about 24 minutes.
7. Let cool. Cut into squares and serve.
