RECIPE: Chicken and Cucumber "Noodle" Salad

SPRINGFIELD, Mo. Peanut Sesame Chicken and Spiralized Cucumber Noodle Salad

•2 tbsp natural peanut butter
•2 tbsp reduced sodium soy sauce
•1-½ tbsp sesame oil
•2 tbsp rice vinegar
•1 tbsp honey
•1 tbsp Siracha
•½ tsp garlic, minced
•1 tbsp ginger, minced

2 English cucumbers
8 oz cooked chicken
½ red bell pepper, diced
½ yellow bell pepper, diced
2 green onions, thinly sliced
1 tsp sesame seeds

1. In a small bowl, whisk together dressing ingredients until well combined. Set aside.
2. Cut the cucumbers in half so that they will fit into the spiralizer. Spiralize the cucumbers into noodles with the thickest size noodle blade. Cut into smaller strands. If you don't have a spiralizer, you can cut the cucumbers into julienne strips.
3. Divide the chicken and cucumber noodles and peppers into bowls. Drizzle about 3 tbsp dressing over each salad. Top with green onions and sesame seeds.
