Taste of the Ozarks puts together a cool watermelon salad

SPRINGFIELD, Mo. Watermelon and heirloom tomato caprese salad

12 2" x 2" thin sliced squares of watermelon
3 heirloom slicing tomatoes cut into four slices each
3 tablespoons fresh chopped basil
1 1/2 cups fresh mozzarella chopped
1/4 cup white vinegar
3/4 cup olive oil
4 tablespoons white sugar
1 tablespoon dried sweet basil
2 teaspoons garlic salt
1 tablespoon reduced balsamic vinegar

On for dinner plates layer four slices of watermelon alternating with four slices of tomatoes. Sprinkle with chopped fresh mozzarella. Whisk together vinegar oil white sugar drive basil and garlic salt. Drizzle dressing over tomatoes and watermelons. Drizzle with reduced balsamic vinegar and sprinkle with fresh basil. Recipe serves four.
