Taste of the Ozarks: Cherry protein trail mix

It's the last official weekend of summer. And this is a great snack for those outdoor activities. And it features local beef jerky.

Cherry protein trail mix

1 cup local beef jerky chopped
1/2 cup dried cherries
1/2 cup dried apricots Chopped
1/2 cup roasted salted cashews
1/2 cup roasted salted almonds
1/4 cup roasted pumpkin seeds
1/4 cup roasted salted pecans
2 tablespoons grapeseed oil
1 teaspoon cinnamon
1 teaspoon ginger

Whisk together oil cinnamon and ginger. Toss together nuts dried fruit and beef jerky and a bowl. Drizzle with oil and spice mixture. Bake in a 200° oven for 48 minutes or until oil begins to dry. Remove from oven and allow to cool to room temperature. Recipe makes snacks for 4 to 8.
