Taste of the Ozarks: Fiesta Shrimp Cups

Fiesta shrimp cups

12 large peeled and Deveined shrimp
1 avocado cut into 12 1/2 inch cubes
1/2 cup sour cream
1 teaspoon lime juice
1 tablespoon +1 teaspoon fajita seasoning
Fresh cilantro for garnish
2 tablespoons olive oil
12 Tostitos scoop chips

In a small bowl mix sour cream lime juice and 1 teaspoon of fajita seasoning. Refrigerate. In a medium sauté pan drizzle the all of oil and turn onto medium high heat. Sauté the peeled and DeVane shrimp in the remaining fajita seasoning. When shrimp is fully cooked remove from heat. In each chip spoon a teaspoon of sour cream mixture one chunk of avocado and one shrimp. Repeat with remaining chips. Garnish with sprig of cilantro. Recipe serves six.
