Corn, heirloom tomato and cheddar cheese galettes

Ingredients

1 cup of fresh corn
1 cup of sliced heirloom tomatoes
2 tablespoons of olive oil
6 basil leaves
1 cup of cheddar cheese
1 can of croissant dough

Directions

-- Cut the rolled out croissant dough into four squares
-- Brush each square of dough with all of the oil, leaving a 1-inch edge with no oil
-- Cover the oil-brushed portion of the dough with tomatoes and corn and sprinkle with cheddar cheese
-- Fold and pinch the edges of the dough to create a barrier for the vegetables and cheese
-- Bake at 400 degrees until crust is golden brown
-- Remove from oven and top with chopped basil

Recipe serves four
