Barbecue zucchini boats

Ingredients

2 zucchini
2 summer squash
2 cups of barbecue pulled pork
1 cup of sharp cheddar cheese
1/2 cup of chopped green onions
1/2 cup of sour cream
1/2 cup of barbecue sauce
2 tablespoons of olive oil
1 teaspoon of salt
1 teaspoon of pepper

Directions

-- Cut each squash in half lengthwise
-- Scoop out squash seeds
-- Put squash on sheet pans
-- Drizzle with olive oil and sprinkle with salt and pepper
-- Bake squash at 350 degrees for eight minutes
-- Remove squash from oven and add 1/2 cup of shredded pork to each half of squash
-- Sprinkle pork with shredded cheese and put back in oven for an additional 8 to 10 minutes
-- Remove from oven and place on serving platter
-- Drizzle with barbecue sauce and sour cream, and sprinkle with chopped green onion

Recipe serves four.
