SPRINGFIELD, Mo. Cranberry Relish
12 ounces cranberries, washed and cleaned
¾ cups granulated sugar
1 tablespoon loosely packed fresh orange zest
½ cup fresh squeezed orange juice
1 cinnamon stick.
Place cranberries in a sauce pan with sugar, orange zest, juice and cinnamon. Place the sauce pan on a burner over medium heat. Cook covered for 15 minutes, stirring occasionally to prevent burning. The cranberries should "pop" or burst. You can leave them in this state or mash them to create a smoother texture depending on your preference. The sauce will thicken as it cools. If you would like a thinner texture simply add a small amount of water and mix well. Enjoy chilled or at room temperature.
This is a very basic cranberry sauce. We've added pears, apples and chopped walnuts to our mix. You could also add figs and balsamic vinegar, or orange segments and cloves.
