1/2 cup all-purpose flour
1/4 teaspoon baking powder
1 pinch salt
1 tablespoon sugar
1/4 cup milk
2 eggs
2 large bananas, sliced
2 tablespoons vegetable oil
1/2 tablespoon butter
Shift together the flour, salt, baking powder and sugar. Gradually add in the milk, stirring briskly until smooth. Add the eggs one at a time, stirring well. Melt the butter and stir in. Add the sliced bananas and fold.
In a preheated fry pan or griddle set at 375 degrees, lightly oil the pan and pour in the batter into desired portions. Fry on one side until browned. Turn and fry until browned on the other side. Remove from heat and keep warm. Serve with maple syrup or other flavored syrup.
