1 cup sugar
1 cup vegetable shortening
1 cup canned pumpkin (not pie filling)
2 cups flour
1 tablespoon pumpkin pie spice
1/2 teaspoon baking powder
1/4 teaspoon baking soda
Combine the sugar and shortening in a large bowl and whisk vigorously until fluffy. Add pumpkin and egg and whisk again until combined.
In another bowl, combine flour, spice, baking powder and baking soda, and stir with a fork until combined. Slowly whisk dry ingredients into pumpkin mixture. Stir until completely combined.
Spoon out quarter sized dough balls onto a lined baking sheet.
Bake at 375 degrees for eight to ten minutes.
