These cheese-stuffed burgers will confer bragging rights on the maker, knocking any regular burgers out of the game. A make-ahead Russian dressing ups the ante.

If you plan to grill at the game, you can make the patties ahead and cart them and the fillings with you in a cooler.

Stuffed steakburgers with Roquefort cheese and Russian dressing

Makes: 6 servings

Russian dressing:
3/4 cup mayonnaise
1/4 cup ketchup
2 tablespoons each: tomato-based barbecue sauce, chopped red onion
1 tablespoon chopped dill or sweet pickles
2 teaspoons each, chopped: fresh parsley, fresh chives

Burgers:
3 pounds ground beef round or sirloin
2 shallots, minced
1 1/2 teaspoons salt
Freshly ground pepper
6 ounces Roquefort cheese or other blue cheese, crumbled
3 tablespoons olive oil
6 each: onion slices, tomato slices, split kaiser rolls

1. For the dressing, combine ingredients in a bowl; cover. Refrigerate at least 1 hour.

2. Prepare a grill or grill pan. Mix together the beef, shallots, 1/2 teaspoon salt and pepper to taste in a large bowl; divide into 6 portions. Shape each portion into a ball; push down into the center of the ball with your thumb. Insert 1 ounce of the crumbled cheese. Gently squeeze the hole shut; press the ball between your palms to form a patty about 1-inch thick. Repeat with remaining meat and cheese.

3. Brush burgers on both sides with the olive oil; season with 1/2 teaspoon salt and pepper to taste. Grill about 4-5 minutes per side for medium.

4. Meanwhile, brush the onion slices with oil; season with remaining 1/2 teaspoon salt and pepper to taste. Grill until golden brown, about 3-4 minutes per side. Brush the rolls with oil; grill with the cut sides facing down until lightly toasted, about 1 minute.

5. Spread rolls with dressing; build the burgers with the onions and tomato slices. . Pass remaining Russian dressing on the side.
