Food service inspections 2007 - 11/19 to 11/24

Springfield - Greene County Health Department

The health department divides food service code violations into two categories -- critical and noncritical.

Critical violations are more likely than other violations to contribute to food contamination, illness and/or injury.

Noncritical violations, although important to the overall food hygiene of the establishment, do not necessarily present an immediate threat to food contamination, illness and/or injury.

A report for each establishment that is inspected shows the number of critical violations, along with a short statement as to the nature of each violation and what should be done to correct it. The report also shows the number of noncritical violations but doesn't list the nature of those violations.

* Some equipment was unclean: soda gun nozzle at upstairs bar, can opener in kitchen

* Open drink cup was on prep table, along with an open plate of food and open carton of chocolate milk (Employees cannot eat or drink from open containers in the food preparation area.)
* Walk-in storage had raw meat in pans over cooked ready-to-eat shrimp
* Two pans of real butter were out at room temperature (They must be discarded; real butter is a potentially hazardous food.)
* No dates were on these ready to eat foods: mashed potatoes, mashed sweet potatoes, open can of crab, cooked shrimp, cooked and sliced baked potatoes
* There was unclean equipment: can opener and container labeled "surplus knives" under prep table -- all knives had food residue (They were taken from the area for cleaning.)
* Ice bins at downstairs bar contain residue.
