Food service inspections 2007 - 12/3 to 12/8

Springfield - Greene County Health Department

The health department divides food service code violations into two categories -- critical and noncritical.

Critical violations are more likely than other violations to contribute to food contamination, illness and/or injury.

Noncritical violations, although important to the overall food hygiene of the establishment, do not necessarily present an immediate threat to food contamination, illness and/or injury.

A report for each establishment that is inspected shows the number of critical violations, along with a short statement as to the nature of each violation and what should be done to correct it. The report also shows the number of noncritical violations but doesn't list the nature of those violations.

* Dried potato residue was on French fry chopper (Staff must clean and sanitize it after use)

* Staff was using hose to spray slicer and causing splash on sliding doors of deli cases and single service bags (This was corrected immediately and education was done with employees.)
* Slicers were not clean; they were used longer than four hours ago (Food contact surfaces in contact with potentially hazardous foods must be washed, rinsed, and sanitized at least every four hours; this was corrected immediately; staff must use logs for showing this is done in timely manner.)
* Pans, cutting boards and knives were not clean in clean rack (Staff must wash, rinse, and sanitize utensils after use.)
* Dishwasher was not reaching sanitizer temperatures (It must reach 180 degrees to get the plate surfaces to 160 degrees; staff cannot use until fixed to sanitize.)
* Spray bottle of chemical were labeled incorrectly (Staff was using degreaser bottle for spray sanitizer.)
* Staff was using glass cleaner as sanitizer on slicer (Only allowable sanitizers may be used.)
