Springfield - Greene County Health Department

The health department divides food service code violations into two categories -- critical and noncritical.

Critical violations are more likely than other violations to contribute to food contamination, illness and/or injury.

Noncritical violations, although important to the overall food hygiene of the establishment, do not necessarily present an immediate threat to food contamination, illness and/or injury.

A report for each establishment that is inspected shows the number of critical violations, along with a short statement as to the nature of each violation and what should be done to correct it. The report also shows the number of noncritical violations but doesn't list the nature of those violations.

Inspector discussed cooling times and adding ice or ice paddles to process; it does not need to sit on counter for two hours but must reach 70 degrees within two hours of coming off the heat.  Inspector recommended taking temps and documenting, and left blue book for education.  Restaurant must change the way the containers of chemicals and bag in box are stored.

* Staff was not sanitizing food-contact surfaces (Food-contact surfaces must be washed, rinsed, and sanitized; this was corrected by buying bleach.)
* Hand sink in downstairs bar was removed (Hand sinks are not to be taken out of commission without Health Dept. approval; if using fourth sink at 4-vat sink, it can not be used as a dump sink.)
* Roaches were evident (This requires frequent inspections to determine the presence of pests, elimination of harborage, and appropriate pest control.)
