Food service inspections 2008 - 3/17 to 3/22

The health department divides food service code violations into two categories -- critical and noncritical.

Critical violations are more likely than other violations to contribute to food contamination, illness and/or injury.

Noncritical violations, although important to the overall food hygiene of the establishment, do not necessarily present an immediate threat to food contamination, illness and/or injury.

A report for each establishment that is inspected shows the number of critical violations, along with a short statement as to the nature of each violation and what should be done to correct it. The report also shows the number of noncritical violations but doesn't list the nature of those violations.

Critical Violations Found: 4
* Not all potentially were held at 41 degrees or less: fresh garlic in oil was room temperature (Staff needs to refrigerate it.)
* Not all potentially hazardous foods are held at 41 or less: flan is 46 degrees (This is probably due to the lights in the case.)
* No date marking was on potentially hazardous foods that are ready-to-eat: flan, soy milk, cooked meat
* Sanitizer in wipe cloth bucket was greater than 200ppm (This was corrected immediately.)

Critical Violations Found: 8
* There was a lack of demonstration of knowledge: owner could not answer questions regarding hot holding, cross contamination or how to test the dishwasher
* Owner touched raw fish with bare hands and then put on gloves without washing hands
* Staff was not preventing possible cross-contamination: raw meats were stored over oranges and lemons
* Not all potentially hazardous foods were held at 41 degrees and below: cooked eggs were 59 degrees and cooked shrimp was 72 degrees; both were sitting out at room temperature during lunch (Food was discarded.)
* Not all potentially hazardous foods are held at 41 degrees or less: raw meat was held on trays on top of make table; meat was 55 degrees (Meat was discarded.)
* Chemical dishwasher was not dispensing proper amount of sanitizer (Machine was primed and was dispensing chemical at 50ppm.)
* Knives stored in knife rack were unclean (They were cleaned immediately.)
* Soda gun and holder were unclean (They were cleaned immediately.)

3/18/08 Re-inspection
Due to repeat critical violations from inspection on3/17/08 and the nature of the critical violations, the food service permit for this establishment was suspended.

Critical Violations Found: 5
* Employee did not wash hands as necessary when he put on head band touching hair and then picked up gloves to put them on (When instructed to wash hands by manager, he went to wash in restroom instead of using hand sink right in the area.)
* Staff is not preventing potential cross contamination: employee touched raw chicken and then went on to touch clean plates, went to walk-in for supplies and never washed hands; set raw chicken on cutting board in-between cooked chicken and lettuce (Manager discarded cooked chicken and lettuce due to chance of cross contamination.)
* At 11:15 a.m. one sushi cooler was not turned on but contained meat and fish for sushi
* Dishwasher was less than 50ppm chlorine in final rinse (It was re-primed with sanitizer; inspector recommended having unit checked out by service company.)
* Employee rinsed metal bowls in sink and returned to storage as if they were clean

Education was given; food service permit was reinstated; inspectors will make monitoring visits to check for future compliance.
