Springfield - Greene County Health Department

The health department divides food service code violations into two categories -- critical and noncritical.

Critical violations are more likely than other violations to contribute to food contamination, illness and/or injury.

Noncritical violations, although important to the overall food hygiene of the establishment, do not necessarily present an immediate threat to food contamination, illness and/or injury.

A report for each establishment that is inspected shows the number of critical violations, along with a short statement as to the nature of each violation and what should be done to correct it. The report also shows the number of noncritical violations but doesn't list the nature of those violations.

* Precooked pork found in upright cooler at 45 degrees; must maintain at 41 degrees/below for safe, cold-holding.
* Chili, precooked meats and other ready-to-eat potentially hazardous foods found in upright coolers without make/discard date. Repeat violation.
* Can opener found with moderate food/debris build-up on blade.
* Food contact surfaces found being washed with soapy water and not removing the detergent with a rinsing step. Must wash rinse and sanitize all food contact surfaces.
* Meat slicer and food contact surfaces found being cleaned with soapy water and not sanitizing food contact surfaces before use. Must wash rinse and sanitize all food contact surfaces.
* Roaches found crawling on prep table where food is being prepared.
* Rodent bait pellets found scattered on floor by wall joints of kitchen and bait stations found open and uncovered. Corrected by removal and clean-up.
