The health department divides food service code violations into two categories -- critical and noncritical.

Critical violations are more likely than other violations to contribute to food contamination, illness and/or injury.

Noncritical violations, although important to the overall food hygiene of the establishment, do not necessarily present an immediate threat to food contamination, illness and/or injury.

A report for each establishment that is inspected shows the number of critical violations, along with a short statement as to the nature of each violation and what should be done to correct it. The report also shows the number of noncritical violations but doesn't list the nature of those violations.

The following issues will need to be resolved or remedied before facility is given approval for food service by conducting opening inspection: -Wallboard needs to be patched on wall by hand sink; -Baseboard needs to be reattached and sealed; -Ceiling tiles (over food prep areas, ice machine and by walk-in coolers) need to be replaced as they are in poor condition; -Air vents found with much dust debris build-up hanging down from ceiling; must clean; -Ice machine will need to properly drain condensation to floor drain; -Culinary sink will need extra cuff (as building inspector stated on his visit) to prevent drainage spilling onto floor; (Note*--Indirect drain on 3-vat sink found to not be an issue, as facility has installed a culinary sink with an indirect connection in addition to pre-existing 3-vat sink.);  Inspector will return for official opening inspection on 7/6 or 7/7.

* Steam table was set at 120 degrees and some food items were out of temperature (Food employee figured out how to adjust thermostat and raised temperature to 140 degrees; also the few items out of temperature were reheated to at least 165 degrees and put back in the hot unit -- food had been in unit less than two hours according to staff.)
