The health department divides food service code violations into two categories -- critical and noncritical.

Critical violations are more likely than other violations to contribute to food contamination, illness and/or injury.

Noncritical violations, although important to the overall food hygiene of the establishment, do not necessarily present an immediate threat to food contamination, illness and/or injury.

A report for each establishment that is inspected shows the number of critical violations, along with a short statement as to the nature of each violation and what should be done to correct it. The report also shows the number of noncritical violations but doesn't list the nature of those violations.

* Meat slicer was not clean; it had excessive dried food debris (It must be properly cleaned within four hours of use with a potentially hazardous food.)
* Significant number of flies were in the kitchen area

* Staff was not properly cooling a potentially hazardous food: the cooked pork cooling in the walk-in cooler read 70 degrees after cooling for 3 hours (It should be cooled from 135 degrees to 70 degrees in the first 2 hours and from 70 degrees to 41 degrees in the next four hours (The pork was immediately sliced into smaller pieces and placed back in the walk-in cooler to rapidly reduce the temperature.)
* Staff was not properly cold-holding a potentially hazardous food: butter and sour cream on the # 2 make table were over 50 degrees (They should be 41 degrees or below; the two items were discarded at the time of inspection.)
* Several dishes/utensils were stored unclean (Staff must properly wash, rinse and sanitize all unclean dishes and utensils.)
* Can opener blade was unclean with dried food debris (It must be cleaned and sanitized within four hours of use with a potentially hazardous food.)

At the time of the follow-up inspection the following issues had been corrected: 1) Foods on the # 2 make table were being properly cold held. 2) Dishes and utensils appeared to be clean. 3) Can opener blade appeared to be clean. 4) Proper cooling procedures were being followed to cool the brisket and pork in the walk-in cooler.
