Springfield - Greene County Health Department

The health department divides food service code violations into two categories -- critical and noncritical.

Critical violations are more likely than other violations to contribute to food contamination, illness and/or injury.

Noncritical violations, although important to the overall food hygiene of the establishment, do not necessarily present an immediate threat to food contamination, illness and/or injury.

A report for each establishment that is inspected shows the number of critical violations, along with a short statement as to the nature of each violation and what should be done to correct it. The report also shows the number of noncritical violations but doesn't list the nature of those violations.

7/14/09 Inspection (after a complaint, in addition to routine)

Inspector reminded manager about importance of protecting surfaces (tray, tray liners) for ready-to-eat foods from cross-contamination by raw/frozen meat prep by employees by washing hands in between glove changes or separation of duty; inspector provided facility with new hand washing signage.

Critical Violations Found: 2
* Flies were landing on food prep surfaces in kitchen (Staff must keep exterior openings closed/protected while not in immediate use and possibly treat facility to prevent entrance of pests.)
* Sanitizing solution in sanitizer sink was over 400ppm quat (Staff must maintain solution at 200ppm quat to effectively sanitize without leaving toxic residue on food contact surfaces; corrected immediately by remaking to 200ppm quat.)

* Dish soap and marshmallows were pushed up against each other on the display shelf (They were immediately repositioned; staff must store cleaners and food items in a manner to prevent possible food contamination.)

* Knives and tongs on grill-line had accumulation of dried-on food debris on food contact surfaces (Staff must clean and sanitize utensils every four hours when using to handle potentially hazardous foods; corrected by education and cleaning/sanitizing utensils.)
* Flies were landing on food contact surfaces (Staff must prevent entrance of pests and from flies contaminating food contact surfaces; inspector will perform compliance check on this issue.)
