Springfield - Greene County Health Department

The health department divides food service code violations into two categories -- critical and noncritical.

Critical violations are more likely than other violations to contribute to food contamination, illness and/or injury.

Noncritical violations, although important to the overall food hygiene of the establishment, do not necessarily present an immediate threat to food contamination, illness and/or injury.

A report for each establishment that is inspected shows the number of critical violations, along with a short statement as to the nature of each violation and what should be done to correct it. The report also shows the number of noncritical violations but doesn't list the nature of those violations.


ANTON'S CUISINE

Inspector educated dishwasher about allowing clean dishes to air-dry and advised against using cloth towel-drying of dishes; will return for re-inspection.

* Employee was washing dirty dishes and then unloading clean dishes from dish machine without washing hands in between (Employees must wash hands when contaminated before handling clean food contact surfaces.)
* Grill cook was cracking raw shell eggs and then immediately handling ready-to-eat bacon and toast (Cook must wash hands between raw and ready-to-eat foods or use utensils to prevent cross-contamination.)
* Raw shell eggs were stored over ready-to-eat foods (corrected immediately)
* Dishwashing machine had 200ppm chlorine for sanitizing solution (It must have 50-100ppm chlorine to effectively sanitize but prevent leaving toxic residue on food contact surface.)

* Staff was holding cooked noodles and tofu at room temperature (They must be held at 41 degrees or below or 135 degrees or above, or use time as public health control.)
* Cooked chicken was 55 degrees and raw beef was 53 degrees on cooks prep cooler (Cold food must be held at 41degrees or below; food was discarded.)
* Staff was not washing, rinsing and sanitizing utensils used with potentially hazardous foods every four hours as required
* No air gap was on sprayer over garbage disposal sink (There must be an air gap that is twice the diameter of the sprayer nozzle between the bottom of the sprayer inlet and the flood rim of the sink.)
* Waste line was leaking from dish machine onto floor (Plumbing must be maintained in good repair.)
* Several containers of cleaners were tored on food storage shelves and food equipment storage shelves (Staff must store toxic materials separate from food and food contact items to prevent contamination.)
* Several containers of medicine were stored on food storage shelves and utensil storage shelves (Staff must store medicine separate from food and food contact items to prevent contamination.)

8/6/09 Re-inspection
All critical items were corrected and it re-opened for food service at this time. All potentially hazardous foods were at proper cold holding temperatures. Waste line leak was repaired. Air gap is provided at sprayer nozzle. All medicine was properly stored. All cleaner and toxic materials were properly stored. Staff will be using time at control on potentially hazardous items held at room temperature. Restaurant is placed on risk control plan to monitor food temperatures to ensure compliance with food codes until next regular inspection.
