Springfield - Greene County Health Department

The health department divides food service code violations into two categories -- critical and noncritical.

Critical violations are more likely than other violations to contribute to food contamination, illness and/or injury.

Noncritical violations, although important to the overall food hygiene of the establishment, do not necessarily present an immediate threat to food contamination, illness and/or injury.

A report for each establishment that is inspected shows the number of critical violations, along with a short statement as to the nature of each violation and what should be done to correct it. The report also shows the number of noncritical violations but doesn't list the nature of those violations.

* Pulled BBQ pork sandwiches were on hot-hold slants at 128 degrees with no make/discard time marked on product (Potentially hazardous foods must be kept at 135 degrees or above for safe, hot-holding; food was discarded.)
* No date-marking was on open bags of potentially hazardous, ready-to-eat foods (Staff must mark with open/discard date if holding for 24 hours or more, and must discard within 7 days.)
* Dirty utensils were in clean dish storage on dry side of draining board (Staff must effectively wash, rinse and sanitize to clean food contact surfaces.)
* Potato slicer and can opener had dried food debris littering cutting blades
* Multiple sets of tongs and serving utensils used to serve potentially hazardous, ready-to-eat foods at self-serve stations and food stations operated by employees had severe accumulations of food/dirt debris (Staff must clean serving utensils every four hours to prevent bacterial growth and cross-contamination onto food product.)
* Flies were landing on multiple food contact surfaces (Company must treat building to prevent pests from contaminating food contact surfaces.)

* Ice dispensing machine had visible dirt and slime mold build-up touching/contaminating ice (Staff must maintain food contact surfaces clean to sight and touch; corrected by emptying machine and cleaning/sanitizing the interior during inspection.)
* Multiple utensils used for potentially hazardous foods were not being regularly cleaned and sanitized; they visibly showed dried-on food debris (Staff must wash, rinse, sanitize every four hours.)
* Sanitizing solution buckets were stored touching bags of batter mix and gel sanitizer dispenser was in risk of contaminating single-serve bags for corn under the dispenser
