Springfield - Greene County Health Department

The health department divides food service code violations into two categories -- critical and noncritical.

Critical violations are more likely than other violations to contribute to food contamination, illness and/or injury.

Noncritical violations, although important to the overall food hygiene of the establishment, do not necessarily present an immediate threat to food contamination, illness and/or injury.

A report for each establishment that is inspected shows the number of critical violations, along with a short statement as to the nature of each violation and what should be done to correct it. The report also shows the number of noncritical violations but doesn't list the nature of those violations.

* Employees were not washing hands between: contamination of hands and food prep and glove changes
* Fruit flies were in ice cubes in ice machine; must eradicate pests, empty ice product and clean machine
* Raw shell eggs and chub of raw beef were stored above ready-to-eat foods in make-table and walk-in cooler (Those must be stored separately; repeat violation.)
* Multiple potentially hazardous, ready-to-eat foods were in make-table cooler at 51-88 degrees, prepared at 10 a.m., temped at 2:10 p.m.; ambient air of cooler is 42 degrees (Staff must cool foods from 135 degrees to 70 degrees within 2 hours and to 41 degrees within 4 hours; corrected by discarding food product; repeat violation.)
* Seven containers of various potentially hazardous, ready-to-eat foods were in walk-in and make-table coolers without proper date-marking to identify make/discard time of product (corrected by discarding; repeat violation)
* Sanitizer for dishwashing machine was 0ppm chlorine (Sanitizer must be 100ppm chlorine to effectively sanitize food contact surfaces; corrected immediately.)
* Single-serve containers had dead fruit flies inside containers and dishes had food debris stuck to surface in clean storage (Staff must maintain food contact surfaces clean to sight/touch.)
* Ice machine interior had severe accumulation of rust and black debris in contact with ice (Staff must clean and/or repair corrosion to prevent build-up and contamination.)
* Ceiling vent in dry good storage was leaking water, non-stop, onto single-serve containers below (Someone must repair leak.)
* Several live roaches were crawling on wall, floors, on sack of cornstarch and by/on ice machine (Company must treat with effective means to eradicate pests.)
