Grilled stuffed bell peppers 7/26/06

Grilled stuffed bell peppers

Ingredients
1 yellow onion, diced
2 cloves garlic, minced
1 pound pork sausage
green bell peppers
2 cup cooked rice
1 pound shredded mozzarella
to taste salt and pepper
Directions

Cut tops off bell peppers 1/2 inch from stem.  Remove and discard seeds and veins.  

Sauté onion and garlic until soft and starting to turn translucent.  Add sausage and cook until sausage just starts to brown.  Remove from heat.

Sauté cooked rice until it's light brown in color.  Mix all ingredients, including half of the mozzarella, except the bell peppers.  Stuff mixture into bell peppers and top with remaining cheese.

Bake at 350 degrees until pepper is soft but not soggy and cheese is hot and bubbly.  This is also great for the grill.
