3 cups of water
1 cup of pure lime juice (an additional 1/2 cup may be added if you like your drink extra sour)
1 cup of raspberries
1/2 cup of pomegranate juice
1 cup of granulated sugar
3 cups of ice cubes
2 cups of water
In a medium sauce pan, combine sugar and 2 cups of water. Cook until reduced by half and mixture is clear. Do not stir while cooking.
Divide raspberries into four glasses. Divide ice into four portions and pour over raspberries. Combine lime juice, cooled simple syrup and 3 cups of water in a pitcher and stir well.
Pour the pomegranate juice over the raspberries and ice, and using the back of a large spoon or wisk, muddle the raspberries until they begin to break apart.
Pour limeade mixture into four glasses. Do not stir. Garnish with fresh raspberries and a lime wheel.
Recipe serves four.
