The cover shot for a Food story on salt-roasting, we were looking for something to convey the beauty of the technique. The page designer happened to be in the Test Kitchen when we were testing the spiny lobster recipe, and thought a simple shot of brushing the salt off the cooked lobster would be beautiful. It is.
