8 ears of corn, husked
2 limes, cut into wedges
4 tablespoons + 4 tablespoons, mayonnaise
2 teaspoons each of salt and pepper
3/4 cup of feta or cojita cheese
2 tablespoons of minced chives

  • Preheat grill to 400 degrees
  • Brush corn cob with mayonnaise
  • Place on hot to grill and grill on each side for 1.5 minutes until there are visible grill marks on each side of the corn cob
  • Remove from grill and allow to cool
  • Pop corn off cob and place cooled corn in a bowl with crumbled cheese, lime juice, salt and pepper, and four additional tablespoons of mayonnaise
  • Stir to combine garnish with minced green onions
  • Refrigerate salad until ready to serve
