    What exactly is kosher? The short answer is a religious certification given to any cooked or processed food that an observant Jew is permitted to eat. A satisfying answer in detail is not easy, so a visual aid may help: picture three identical matzo balls, each floating in its own bowl of soup: one at Shuman's in Bloomfield, the second at Gold's in Westport, and the third at Michael's in Middletown.
