An Independence Day side dish recipe for your BBQ

Quinoa, Fennel, & Cherry Salad

½ c cooked quinoa
1 c pitted and quartered cherries (fresh or frozen)
¼ c thinly shaved fennel
2 Tbsp parsley, chopped
½ oz feta cheese
1 Tbsp sunflower seeds
2 Tbsp extra virgin olive oil
1 Tbsp lemon juice
1 tsp lemon zest
2 tsp honey
Salt and pepper to taste

Combine quinoa, cherries, fennel, parsley, feta, and seeds in a bowl and toss. Next, add oil, lemon, and honey. Mix until well combined. Taste, then season with salt and pepper if desired.
