Harvest Apple Arugula Salad

Harvest Restaurant in Rogersville shared this recipe for Harvest Apple Arugula Salad with Terrell Creek fresh goat cheese, toasted almonds and lemon-maple vinaigrette.

Lemon-Maple Vinaigrette:

Whisk the following:
-1/3 Cup of lemon juice
-1/4 Cup of maple syrup
-Zest of 2 lemons
-2 Tablespoons of diced shallots
-1/2 Cup canola oil
-Salt/pepper to taste

Toasted Almonds:
-Mix 1/2 cup almond slivers
-1 Tablespoon canola oil and 1/2 teaspoon of salt
-Toast at 350 for roughly 6 minutes
-Let it cool

Salad Assembly:
-Cut fresh Jonagood Apples into sticks (leave peels on)
-Crumble fresh Terrell Creek Farm goat cheese
-Rise and spin fresh arugula and almonds with lemon-maple vinaigrette
-Top with crumbled goat cheese
