If you're sick of eggs for breakfast, here are two other protein options for breakfast. KY3's Paul Adler visited with Pamela Hernandez of Thrive Personal Fitness on this Fit Life for two breakfast choices.
Two super speedy high protein breakfasts – without eggs!
If you're vegan curious or simply tired of eggs, you do have options for getting the satisfying protein you need at your morning meal. I've got two easy dishes that are simple to make and delicious to eat.
Overnight oats are a great way to get a fiber rich breakfast but they do take a little planning. The night before you'll need to mix 1/3 cup of oats (any kind but instant work just fine) and 1/3 to 1/2 cup of liquid. You can use a non-dairy milk like Ripple (which is rich in pea protein), dairy
milk, water or even tea.
Let this mixture sit in the refrigerator overnight. The next morning, you
can warm it up 30-45 seconds on the microwave for a hot breakfast or keep it cool straight out of the refrigerator.
For a big protein boost, you can add protein power but it's not necessary. You can add a variety of toppings for flavor and protein. I recommend cinnamon with pumpkin seeds and hemp seeds, both of which are a great plant-based protein sources.
An even quicker option is a simple parfait. Start with Greek yogurt or a non-dairy yogurt like Daiya or Good Karma, then layer on fresh fruit followed by a high protein granola. Repeat the layers as high as your jar will go!
