Quick Meal! Zoodles and eggs provide the nutrition in this one

4 Ingredient 10 Minute Nutritious Delicious Dinner
When I take clients on grocery store tours, I try to show them how to use simple shortcuts to make quick and healthy meals. This recipe with just four ingredients provides a delicious dinner that can be ready to eat in under 10 minutes. First, heat a non-stick pan over medium-high heat. Spray the pan with the an olive oil or avocado oil cooking spray. Then add 1/2 a cup of sliced mushrooms and half a package of pre-spiraled zucchini noodles to the pan. (You can also do your own "Zoodles", spiraling one medium zucchini for one person.) Sauté the mushrooms and zucchini noodles for three to five minutes. While the vegetables are cooking, use a silicon egg poacher to poach an egg in the microwave. Spray the silicone egg poacher with the cooking spray. Then crack one egg into the egg poacher. Place the egg poacher into the microwave and cook for 30-40 seconds. Remove from microwave and let it sit for one minute. When the vegetables are done turn off the heat and add 1/3 cup of your favorite marinara sauce to the pan. The heat of the pan will warm up your sauce. Then transfer the mixture from the pan to a plate or bowl. Place your poached egg on top and enjoy!
