SPRINGFIELD, Mo. Ginger Date Cookies

2 1/4 c. White wheat flour
1/2 tsp salt
2 tsp baking soda
2 tsp ground ginger
1 c. Pitted dates
3/4 c. Softened butter
1/2 c. Sugar
2 inch piece of fresh ginger
1/2 c. Blackstrap molasses
1 egg, beaten
1/2 c. Chopped crystalized ginger
Turbinado for rolling (optional)
Preheat oven to 350-degrees. Combine flour, salt, baking soda and ginger in a bowl. Set aside.
In a food processor or blender, add dates and fresh ginger and process until smooth.
Combine date/ginger mixture, molasses, butter and sugar until mixed well. Add the egg and crystalized ginger, and stir just until combined. Refrigerate for at least an hour, or overnight.
Shape into small balls (about 1 inch) and roll in turbinado sugar. Place cookie sheets in oven for 8-10 minutes depending on your oven. Cool and enjoy!
