RECIPE: Balsamic Roasted Asparagus

Serving size: about 2/3 cup


1 pound asparagus
1 tablespoon olive oil
1 tablespoon balsamic vinegar
½ tsp kosher salt
½ tsp bottle minced garlic
¼ tsp black pepper

1. Preheat oven to 425 F.
2. Wash asparagus and pat dry with paper towels. Snap off tough ends of asparagus. Spread asparagus evenly on an oven sheet. Line oven sheet with aluminum foil or parchment paper for easier cleanup.
3. Drizzle olive oil and balsamic vinegar over asparagus. Sprinkle with garlic, salt, and pepper. Toss to coat.
4. Bake for 10 minutes, turning asparagus with a spatula halfway through cooking. Serve immediately. Top with freshly grated Parmesan cheese if desired.
