RECIPE: Pumpkin Pie Breakfast Bites

SPRINGFIELD, Mo. Pumpkin Pie Breakfast Bites
12 eggs
1 cup canned pumpkin
1/2 teaspoon pumpkin pie spice
Dash of Himalayan salt

Preheat oven to 350-degrees. Combine ingredients in bowl and whisk until well blended. Spray a muffin tin with olive oil spray or rub with olive oil to prevent sticking. Fill the muffin tin until each muffin is full. Bake 25-30 minutes or until the muffins rise and set. Cool and keep refrigerated or freeze for later use. Makes 8 servings.
