Spicy and healthy recipe for a cold day

KY3's Paul Adler visits with Pamela Hernandez. Pamela showed Paul a simple and spicy recipe for roasted chickpeas.

Roasted Chickpeas – Easy, Crunchy and Delicious! Chickpeas are quite possibly one of the best-planted based protein foods available. With 8 g of protein and 6 g of fiber per ½ cup, chickpeas (or garbanzos) make a perfect salad topping, soup addition or afternoon snack. The easiest way to enjoy chickpeas is by roasting them. The basic recipe is to preheat your oven to 400 degrees. Then drain and rinse a can of chickpeas. Mix the chickpeas with 1-2 tbsp of oil and your favorite seasoning. Place chickpeas in a single layer on a cookie sheet covered with parchment paper and roast for 20-25 minutes. Here are three amazing flavor combos for you to try. 1 tbsp peanut or sesame oil + 1 tbsp soy sauce + 2 tsp Chinese 5 spice powder 1 tbsp canola oil + 2 tsp Cajun spice 1 tbsp olive oil + 1 tbsp parmesan cheese + 1-2 tsp garlic salt Not matter what combo you choose this crunchy snack is way better for you than chips or crackers!
