Ultimate spring sandwich


8 slices of hardy grain bread
2 whole avocados, pitted and sliced
2 cups of alfalfa sprouts
1/2 English cucumber, thin sliced
4 ounces of goat cheese
1 red onion
1 teaspoon of garlic powder
1 teaspoon of dry mustard
1 teaspoon of salt
2 teaspoons of sugar
1 cup of tarragon vinegar


-- Peel and thinly slice the red onion
-- In a medium-size bowl, whisk together the vinegar, sugar, salt, dry mustard, and garlic powder
-- Put the sliced onion in the vinegar mixture and let sit for 30 minutes to one hour
-- On four slices of bread, spread 1 ounce each of goat cheese
-- Top goat cheese with sliced cucumber
-- Quarter each avocado and slice; scoop out avocado meat
-- Put avocado on top of cucumbers
-- Strain the onions and place a few onion slices on top of the avocado
-- Top onions with alfalfa sprouts and, finally, with the second slice of bread
-- Cut sandwich in half on a bias and serve

Recipe serves 4 to 6.
