Taste of the Ozarks: Harvest Apple-Celery Root Soup

SPRINGFIELD, Mo. -- Harvest Apple-Celery Root Soup

1 tablespoon canola oil
1/2 yellow onion, julienned
1 celery root, peeled and rough chop
1 tart Ozark Gold apple, peel, core, rough chop
4 cups water or vegetable stock
1/3 cup cream, optional
Salt, pepper to taste

Heat oil in pot over medium heat, add onions and cook until soft about 2 minutes. Add celery root, apples, stock/water and simmer until celery root is soft. Add cream, if using, blend, season with salt and pepper. Garnish with blue cheese croutons and caramelized apples.
