2 medium zucchini
1.5 Tbsp olive oil
1/3 cup shredded parmesan cheese
1/3 cup panko bread crumbs
¼ cup fresh basil, chopped
¼ tsp garlic powder
1/8 tsp Himalayan pink salt
1/8 tsp ground pepper
1. Preheat oven to 425. Line a baking sheet with parchment paper. Slice zucchini into ¼ inch thick rounds. Toss with olive oil.
2. In a bowl, stir parmesan, bread crumbs, basil, garlic powder, salt and pepper together. Place each zucchini round into the parmesan mixture, and press the coating onto both sides.
3. Arrange zucchini in a single layer on the baking sheet with parchment paper. Bake until browned and coating is crisp.
