Taste of the Ozarks: Tequila Steak Tacos

Tequila Steak Tacos
Makes 16 small street tacos
1⁄2 cup white tequila
1⁄4 cup lime juice
1 tablespoon coarse sea salt
1 tablespoon sugar
1 tablespoon black pepper
1 thin sliced jalapeno
2 hanger steaks (2 pounds each) Chimichurri sauce (recipe below)
Pickled red onions (recipe below)
16 flour or corn tortillas

Combine the all ingredients in a ziplock bag and shake until well mixed
Add the steaks, shake and massage the marinade into the steaks
Refrigerate for at least 2 hours, overnight is best

Grill the steak on a grill plate, bbq grill or cast iron skillet over medium to medium high heat

Approximately 3-4 minutes per side

Hanger steaks are best cooked to a medium temperature or less Remove from heat and let rest a couple minutes

Slice across the grain in fairly thin strips

Load tortillas with even amounts of sliced steak

Top steak with 1-2 teaspoons of chimichurri sauce

Finish with pickled onions on top of tacos
Chimichurri Sauce
1⁄2 cup of flat leaf parsley
1⁄2 cup of cilantro
4 teaspoons of minced garlic
2 tablespoons of fresh oregano, or 1 teaspoons of dried oregano
2 tablespoons red or white wine vinegar
1⁄2 teaspoon sea salt
1⁄4 teaspoon black pepper
1⁄4 teaspoon of red pepper flake, if you like more heat you can use up to 1 teaspoon 1⁄3 cup olive oil

Finely chop the parsley, cilantro and oregano

Or put in food processor for several pulses

Stir in vinegar, salt, pepper, olive oil and red pepper flakes

Or if using food processor add everything but olive oil, pulse and then on low add oil

Serve immediately, if you refrigerate for later-let it come to room temperature

Pickled Red Onions
1 medium sized red onion
1⁄2 cup water
1⁄4 cup distilled white vinegar
1⁄4 cup apple cider vinegar, or additional white vinegar 1 1⁄2 tablespoons honey
1 1⁄2 teaspoons sea salt

Slice the red onions fairly thin. This works better if you have less time for them to pickle, If you prefer more of a crunch and are preparing well in advance cut them a little thicker

Over 1/4 inch thick will take closer to 24 hours to pickle put onions in a mason jar, packing them in tightly in a small pan combine all the other ingredients

Bring the ingredients to a slight simmer, no need to boil, just melting the salt and honey

Pour mixture over onions in the mason jar

Push onions down into mixture to make sure they all are soaking

Stir and push down a few times over the next hour while chilling them in the refrigerator
