SPRINGFIELD, Mo. Thai Meatballs

1 package ground chicken
1/2 c. Diced green onion
1 tsp grated ginger
1 garlic clove, minced
1 tsp fish sauce
2 Tbsp (less or more to taste) Red Curry Paste
1/2 c chickpea crumbs (or panko)
1 Tbsp Ground flax seed
Juice of 1/2 lime
1/2 c chopped cilantro
Salt to taste
1/2 c. Coconut milk
2 Tbsp peanut butter
1 Tbsp red curry pasted
1 Tbsp lime juice
1 tsp minced garlic
Sriracha to taste
Preheat oven to 400 F. Mix all ingredients for meatballs with your hands just until ingredients
are combined. Form into meatballs and put on a baking sheet lined with parchment paper.
Bake for 20 minutes or until browned and cooked through.
Meanwhile, combine the ingredients for the peanut sauce. Enjoy!
