Taste of the Ozarks recipe: Egg Clouds (5/12/17)

SPRINGFIELD, Mo. Cloud eggs


-- 4 eggs, yolks separated
-- (to taste) salt
-- (to taste) pepper
-- 1/3 cup of shredded Parmesan cheese
-- 1/3 cup of bacon, crumbled
-- 1/4 cup of chives, chopped

-- 2 mixing bowls
-- electric mixer or whisk
-- baking tray


-- Preheat oven to 450 degrees
-- Separate the eggs: egg whites in one bowl and egg yolks each into their own bowls
-- Using electric mixer or whisk, mix egg whites until thick and fluffy
-- Fold in bacon, Parmesan cheese, and chives; do not overfold
-- Scoop onto baking tray and make an indent in the middle using the back of a spoon
-- Bake for 5 - 8 minutes or until egg whites start to brown
-- Place egg yolks into center of egg whites
-- Bake for 3 more minutes
