Zesty roasted Parmesan vegetables

1 cup cherry tomatoes
1 cup baby Bella mushrooms
1 Cup cauliflower florets
1/2 cup fresh grated Parmesan
3 tablespoons olive oil
1 teaspoon each salt and pepper
1 teaspoon granulated garlic
1 teaspoon brown sugar

Toss the tomatoes mushrooms and cauliflower in the olive oil, salt, pepper, garlic and brown sugar. Please mixture on cookie sheet and roast and a 400° oven for 16 to 20 minutes or until edges become dark brown. Remove from oven and sprinkle with fresh Parmesan.

Recipe serves four.
