60 Second Chocolate Avocado Pudding (also known as The Other Chocolate Pudding)


-- 2 nearly ripe avocados
-- 1 to 2 tablespoons of coconut sugar or honey
-- 1/2 cup of cocoa powder
-- 1 pinch of salt
-- 1 teaspoon of vanilla
-- 2 tablespoons of coconut oil
-- 2 dashes of cinnamon

(Serves 2)


--Cut avocados in half, being careful not to cut into the seed (be sure they are nearly ripe, as the avocado becomes less neutral tasting as it approaches the ripened stage)
-- Remove seeds and discard
-- Scoop out avocado from peel
-- Combine all of the ingredients in a food processor or chopper; mix until ingredients reach a smooth, thick consistency
-- Refrigerate for up to 2 hours to allow pudding to firm up (feel free to consume right away if you can't wait that long!)
-- Pour pudding into graham cracker crust and top with raspberries to make this chocolate pudding into a chocolate tart!
